In a 2L pressure cooker, arrange the following in the order given below:
Layer 1: 2 tbsp oil
Layer 2: 2 onions sliced on one half of the cooker and one big brinjal chopped on the other half.
Layer 3: 6 slit green chillies
Layer 4: 1 tsp salt, 1/2 tsp hing, tamarind paste 1 tbsp
Close and cook on high flame for 4 whistles. Open & blend with 2tsp paruppu podi (spiced lentil powder), 1/4C grated coconut & 1/2C coriander leaves.
Serve with idli, dosa or rice.
